AGWA de Bolivia Herbal Liqueur
Made from Bolivian Coca Leaf,
Chinese Green Tea, African mint,
Amazon Guarana, Argentinean
Black Mountain Tea, Ginseng,
Lavender and Cucumber.
Almost fluorescent light green in
color. A very complex nose with
herby, minty notes with dry tobacco,
bay leaf and hint of eucalyptus.
Sweet in the mouth with a long
peppery sensation on the tongue.
“I would collect placemats from diners,” she said.
“You know, the ones with all the classic cocktails on
them - and I remember going into the Moonstruck
Diner on Fifth Avenue as soon as I turned 21 and
ordering a Rob Roy.”
After her schooling and periods in the theater world
and as a teacher, Gullo finally found herself behind
the bar in New York, loving every minute of her
cocktail education. It wasn’t long before she decided
to follow her passion for potent potables to the Big
Easy.
“I feel at home here,” she says. “NewOrleans is filled
with people of all different ages and backgrounds,
all coming together and loving this wonderful city.
And it’s so close-knit! Of course I see everyone I
know at Rouses.”
Her mastery of the craft is well on display at SoBou,
where she and her bar staff run a cocktail program
that stands out, even in a city famous for cocktails.
“I love using infusions (like Earl Grey tea, for
instance), alternate sweeteners like maple syrup,
hand-made simple syrups, agave, and I always love
to use fresh herbs, as well,” she says. “How great is
it that Rouses grows herbs on the rooftop of their
downtown store?”
Should you find yourself at the bar with Abigail on
duty, be sure not to miss her signature drink, the
“Charbonneau Way.” An homage to her French-
Canadian roots, it features rye whiskey (her favorite
spirit), maple syrup, lemon, ginseng liqueur, and an
absinthe-rinsed glass.
“We also use Bitterman’s Amere Sauvage,” she
notes, “an herbal liqueur that you can get at Rouses!”
