FAMILY LETTER

Kitchen Traditions

M

y cooking is inspired by people and places. My grandfather, Mr. Anthony

J. Rouse, Sr., was just one generation removed from Italy. Paw made the

best spaghetti and meatballs with ground beef and Italian sausage, and anchovy

bread filled with Pecorino and Romano cheese. Paw inspired my Italian side. I love

to make pasta with garlic, olive oil and fresh basil. You can add chicken, shrimp,

crawfish, just about anything, and it will be delicious.

My dad, Donald, influenced my camp style of cooking. Camp food is basically

onions and wild game smothered down in a pot for a whole day, rice and gravy style.

Rice is key to camp cooking, even breakfast. I cook bacon every morning, then fry

leftover white rice, onions and eggs in the leftover grease.

Acadiana is the birthplace of real smoked sausage, real tasso, and real boudin,

and living in Lafayette inspired my Cajun side. The Lafayette part of me is very

particular about my smoked sausage.There are lots of sausages out there, and a link

may look right, but if it doesn’t smell like smoke, it’s not real smoked sausage.

Now for a real Gulf Coast meal, add that smoked sausage to that pasta with garlic and

olive oil ...
